Freezing stuff (Meat to those in Flat Rock, aka Level Pebble)
Stumbled across sumthin that mebbee sum of ya already knew. In my acute awareness of doing sumthin cuz, I froze sum backstrap venison 5 years ago. Yessir, you read it right, 5 years ago. I had mentioned this to Huskee a week ago and he replied with a hmm.
I took the meat and wrapped it in Suran type plastic and the tightly wrapped it in aluminum foil. If it were today I would not have done it cuz of plastic and fat/meat thing. I just might reconsider storing vs. cookin in plastic cuz of this. But I got off the rails here. The end result is as if I had just frozen the meat a couple of days ago. It is fresh tastin and NO freezer burn.
That is how my brother froze his venison prior to purchasing a vacuum packer. I don’t know if he ever went five years but the method was the same. Now he vac packs.

Yeah I’ve dug stuff out of the bottom of the freezer I’d forgotten about, also prior to having a vacuum sealer. Was pretty easy to figure out if was good enough to eat, though. Defrosted it aaaaand it smelled rancid. And the freezer-burn was pretty evident.
So there ya go. Was a shame to have to toss it, but not the first time, but hopefully the last!
I do that will rolls - both store bought and homemade. I wrap in plastic wrap and then put in a freezer bag, and I don't get any freezer burn or off taste. I just don't eat much bread, and Nan is doesn't eat gluten, so rolls of any kind last months if I freeze 'em.
When we did a a lot of deer hunting everything got wrapped in freezer paper, then at some point the meat was wrapped in saran wrap and then freezer paper.
My dad has cooked some roasts that had been in the freezer over 10 years. He would cut away the freezer burn and cook what was left.
It seems like air truly is the enemy of freshness. I defrosted a cooked boneless chicken thigh the other day that had been in my normal freezer (so constant defrost cycles) for nearly three years. It was fine.....perfectly fine. It had been vacuum sealed, of course.
Well, Indidn't cook em (2). Came home from a mornings activity and me wife has got em in a skillet. She say "medium rare, bloody right"? Bennin a stick in the mud says "I will check it" as Ingit the thermometer out. Dang if it isn't 121. Amazin!!!
