I found out yesterday that a local roaster I thought had closed moved. I hadn't been there in years, but visited yesterday and bought a bag. I now have about 1.75 bags, (different roasters), to use before I can order, but that's OK 'cause I need time to go through all the suggestions anyway.

Cocktails: Alton Brown turned me onto boulevardiers. That has become my travel cocktail. At home it is usually spiced rum, vodka, or whisky mixed with ginger ale.
Planning on a DIY smoker. **Those plans got scrapped. Between the PBC and the SnS, a DIY smoker project has moved way down the list. Now I want to build an Argentinian style grill!

No restrictions with me (love meats, cheese, veggies, etc...) however a friend I often cook with has celiac so I avoid gluten in my cooking. (PS. Stone delicious is a gluten reduced beer that he highly recommends )

We have a local roaster that has a subscription model. So now I just automatically get my freshly roasted whole bean right at my doorstep. So convenient for my weird hours. I live in a near by town but my bag typically has a roast date within the last 2-3 days. When I signed up, I was surveyed for my preference for roast. Each bag is a surprise too. Various countries, farms, styles, and blends.

Coming late to the party. There are several local roasters in our town (least 3) and we buy exclusively from Black Powder Coffee. They have subscription and mail order along with wonderful flavored coffees.
Like Bourbon, coffee is very subjective to the consumer. We were lucky to find one we absolutely love.

Not sure if you've considered roasting your own. I use a Gene Cafe half-pound roaster and buy beans from Burman Coffee and Smokin Beans. Smokin Beans also sells fresh roasted coffee. Good sources for already roasted are Mad River Coffee and King David in NH. These are my go-to when the SWFL heat gets too intense.
As you can see, there is no shortage of great coffee to be found.
Speaking of control, I am just now putting together a PID controller to have better control of temperature. My roaster can have temp swings of ten degrees or more because of the design. I want better control hence the PID. Temperature is the only variable you can change on the Gene Cafe. Looking forward to see how it goes
Will do. I got kind of hung up and haven't finished the controller yet but I am nearly done. I'm curious to find out if I have to change my roast profile if the temps don't swing all over the place. I be facing a new learning curve.
