Next weekend I’m cooking for a group for my our 25th anniversary. There will be about 60 people, mostly adults.
I’m doing some briskets and some pulled pork. For the sides, I was planning to make a warm Caesar potato salad, some Caesar salad and a broccoli salad. I’m wondering about quantities for these side dishes?
I know I’ve seen a post about this before, and I thought there was a handy chart to follow, but I can’t seem to find it.
For quantities always eyeball it. Biggest mistake people make is this line of thinking: How much of this side do I need to feed 60 people? And then use a quantity that would feed all of their guests as if that will be the only thing they will eat. I guess my point is people tend to overestimate and while leftovers are nice you probably don’t want a boatload leftover bless you can repurpose some of it into another dish.
Like JeffJ I don’t want too many leftover, but I’ll take too many leftovers all day vs running out of food!
I tend to run in the 1/4 lb per person neighborhood - adjusting based on how many different sides and the makeup of the crowd - some people are known to eat more ham others!
