    Your favorite leftovers???

    Leftover rolls, toasted. Leftover prime rib, seared. Deeply caramelized white onions(now brown). Horseradish sauce. I guess that is just a ribeye steak sandwich now that I think of it. I take leftover corn and make fritters, serving with sour cream. I could eat that every day

    Leftover turkey with all the leftover fixings. The balance can be sliced into lunchmeat or turkey salad. Prime Rib reheated steamed. Any of those additional leftovers make a great French Dip sandwich. I don't mind leftovers at all. Wife currently making turkey soup from the Thanksgiving frozen broth.

      Love left over brisket, beef plate ribs, and ribeyes. That said, my wife and I will be eating leftovers for awhile. Will be making the last four pizzas on the Baking Steel tonight. Tomorrow, beef short ribs with mashed potatoes and then Tuesday leg of lamb with more mashed potatoes and some green beans. We may get to fresh food by Friday!

          I make an extra pan of cornbread dressing every year at Thanksgiving to cut up in single serving sizes to vacc seal and freeze. I have it with leftover chicken through the year. It’s a great easy meal when the wife is out of town or when i’m hungry for dressing.

        It is 1:30 am. You haven't been able to get to sleep. Now you find yourself sleepless and hungry. There is only one thing to do....you slowly and carefully make your way to the kitchen, turning on just the dimmest light to find your way.

        You open the refrigerator door and you see it. A bucket. In which sits the quintessential leftover: the fried chicken you made the evening before. You grab a thigh and without even closing the refrigerator door, bite into it. It is cold, but you do not care. In fact, this is the way it was meant to be.

        For a moment, bliss, self-actualization, and a state of being few humans ever achieve descends upon you. Leftover fried chicken certainly must be what Hermes enjoyed when Calypso serves him ambrosia in the Odyssey. "ἣ δ᾽ ἀμβροσίην καὶ νέκταρ ἐνώπιδος ἔθηκε" you quote, not at all surprised this heavenly food bestowed on you the power to remember the passage you last read in high school, let alone this sudden capability to utter ancient greek.

        Last nights "casserole" (chili, spaghetti, whatever all-in-one you've got) with a fried egg on top for breakfast.

            Other than foods that always taste better the next day like gumbo, I think I look forward to Thanksgiving left overs, especially cornbread dressing with gravy and sweet potato casserole that has the crumble on top. That sweet potato dish is like dessert.

                  I think the only leftover I don’t like is leftover fish.
                  but I guess if it was grilled originally, a little liquid smoke and mayo with capers would make a good fish spread.

                    Meatloaf can be seared off and made into a sammich. Colt catfish tacos or sandwiches, smoked ham or turkey for spreads, salmon or trout for dips, grits can be cut into squares, dreaded and fried, lots of things. Leftovers can really be transformed.

                      Fried grits are the bomb. My Dad and I would playfully fight over them. They must be fried in bacon grease. Butter is, "meh."
