    Lost the turkey carcass to mishandling

    We have Thanksgiving at the in-laws’ house. The last few years I’ve taken the carcass, along with the basic trimmings like: meat stuck to the bones, shards from slicing, wings, juice, etc.; and made a few quarts of turkey soup. I usually get 4-5 quarts of some damn good soup. I make dumplings out of leftover stuffing, they are killer.

    This year, my BiL packed up the carcass and trimmings for us, but left it all sitting on the counter rather than in the fridge. I forgot to remind him (I share blame), and about halfway through the Bengals/Ravens game, ie 9:30, we made the joint decision that if we wanted soup we could go spend $10 on more turkey today.

    Damn, I hate wasting stuff.

    On the plus side at least you got to eat the turkey meat. Over the past 55 years of marriage Kathy and I have lost two fully cooked turkeys. One to Babe, our German Shepherd at the time, and much later in time one to Molly, our Golden Retriever. Both times we ended up eating our now traditional “Dog Ate The Turkey” main course of fried bologna.

      My in-Laws would rescue Greyhounds. Christmas dinner was to be a Prime Rib Roast...it was, for a coupla spoiled GreyHounds that could get anything from the counter.
      "Hey where did the Prime Rib go?!?" Woof.

    My thing is to make the soup, and today I had to pick up some scrips so I checked for bird sales. Nothing I wanted to spend, so I’m going to pivot to gobbler sliders. Using dinner rolls, stuffing, turkey slices, cranberry sauce, mashed, etc.

      Turkey noodle soup after Thanksgiving has been a tradition in my family as far back as I can remember. It is rated above the turkey and all the trimmings served on Thanksgiving. I have to finish the soup today for my daughter to have some before she leaves to go back to Oregon. My other daughter will pick it up when she gets back home on Sunday.

        I have turkey bones simmering for turkey noodle soup, although it may be more noodles than turkey due to the family not leaving much of my smoked turkey.

          I use the carcass for stock and the leftover meat for tetrazzini.

            Our carcass was picked pretty clean and went in the trash. The leftover meat will be either soup or green chili and turkey enchiladas.
