    The pink butcher paper

    I found an interesting web site on smoking a chuck roast with an elaborate technique for retaining the bark using pink butcher paper. I wonder if that would work on Meathead's Katz pastrami recipe? He notes that it is a wonder to him that the bark stays crisp after steaming.
    Well, I ran to Home Depot and bought some pink butcher's paper and am trying it on Baltimore Pit Beef tomorrow. A highbred combination of Meathead's recipe and the pink paper. There is no wrong in barbeque. Except boiling ribs.
    How do you seal the paper? Scotch tape? Masking tape?

    When I use butcher paper, I just roll out extra and just tuck the extra folds underneath.

    Is this the same pink roll I used to protect new floors with. Do not remem what it was called. Construction paper?
    Now I remem Red Rosin paper! Are we talking the same stuff? Roll 3foot by 50.
    I do not recall ever seeing bbq paper to wrap briskie in.

    Northofchicago make sure it’s food grade! If you search the interwebs, you will find several different products…. Some if it is even branded with a company’s logo or little animal pictures.

      That may be good advice. Many of us assume if it's for butchers it should be food safe. I certainly would

      I bought it in the barbeque section of Home Depot. I believe the brand in Reynold's. Appreciate the advice.

    Simple, wrap it the way briskets are wrapped. There’s no shortage of YouTube videos on it.

        Northofchicago How did the paper work out for you? I didn't care for it wrapping brisket. It was difficult to get it to wrap tightly due to the stiffness of the paper. Because of that, I think I had insulating air pockets within and underneath the paper. I see many people moisten the paper with tallow to soften it up, which might have helped. I do however prefer paper to foil for wrapping ribs. I believe the bark doesn't get nearly as "soggy".

          Wet the paper thoroughly with whatever you're using to spritz, before you wrap. It makes the paper more pliable.

        Actually, there is red/pink paper sold for protecting floors during painting and construction. It is heavier than food grade butcher paper. But the construction stuff is not intended for food use. I don't know for sure what may be toxic in the construction stuff, but I have no interest in finding out. I use the construction paper when painting and I use real butcher paper to wrap food in.

          Pink constr stuff is called "Red Rosin" prolly a waxy substance involved.
          I used it to cover newly finished hdwd floors. Def not food grade.

          That's about what I assumed. Red rosin is good for floors. Not so good to wrap your ribs in! It is cheap though.

          That is a great looking paper cutter. Easier to use than the teeth on the side of the paper box.

        I bought some Reynold's Pink Butcher paper a while back...possibly last summer. It has really only ever been used for counter protection. I need to try actually wrapping meat with it and see how it comes out.
