I'm learning to "KISS" my BBQ
This reminds me of when I first started getting into BBQ, long before I found this place. In the middle part of last decade (what an odd phrasing), if you searched on YouTube how to do ribs, you'd end up with a lot of comp-style recipes.
My first smoked ribs used one of these recipes and they came out stupidly sickly sweet. Like rib candy, which sounds nice, but isn't to my taste. The pork flavor was so masked that it could have been chicken and I would have tasted no difference.
Now, on the flip side, I think one can go too far in the other direction. For example, I don't overly prefer Texas-style pork ribs. I need something more than just SPG for pork.
And I don't think I am hallucinating this, but didn't one of the major competition events "ban" a certain style of cooking ribs because it was just way too sweet? I want to say it used a lot of Blue's Hog's sauce, but I am not overly sure of that. For the life of me I can't find the story online. Anyone have any idea of what I might be remembering?
And you won't either. LOL
Just before COVID I was signed up to become a BBQ Judge. COVID hit and I got a refund. The more I studied in line the less I want to judge comp BBQ.
If you really want to keep it simple, then just par-boil your ribs. Or better yet, just go buy smoked ribs from a BBQ restaurant. Can't get any simpler than that.
