So I've been kosher for almost 25 years now, and I have to admit, despite the numerous attempts out there. There is no decent substitute for bacon. Now, I know all you purists out there are going to tell me there is no way to copy that. That's fine!!! But there has to be something better than what's commercially available known as "beef fry".
So...
The rules are:
-Must be a kosher animal...chews it's cud and has a split hoof, or is in the foul family. (cow, sheep, deer, goat, giraffe, duck, chicken, turkey, etc)
-the cut of meat must come from the front half of the animal. No butts about it.
-no dairy, or dairy byproducts allowed. Please don't be cheesy about it.
My equipment: a traeger, a food safe 5gal bucket for curing (Prague powder #1), and a refrigerator. That's it!!!
