Last night I grilled scallops served with a lemony salsa verde and tonight I made Meatheads grilled eggplant parm. If you like scallops, I'll give you the recipe. My in-laws said it was the best meal they've had in years. Meatheads eggplant parm is excellent.

I like to make enchiladas out of leftover smoked pork. You can use a disposable pan if you don't want to scrub the smoke or KBB off the dish. The cheese also takes on a light smoke flavor and the tortilla does too, especially flour. Light smoke as the meat has smoke too.

You can make Jambalaya on your grill...😎 This is something different that you might like. Use a cast iron stock pot.

Backyard Jambo, T1000 Woodmaster, MAK 2 star, 14" & 22" WSM, 2x 22" Weber Kettle, Stoven, Hot Box Grill, Hasty Bake Ranger, RecTeq Bullseye, GMG Davy Crockett; Original Grilla and others I'm not remembering!
It'll be peach season soon. Peel, half, deseed peaches, sprinkle with your favorite spicy rub or fresh grated nutmeg, cook in a buttered 1/2 pan on the grill. Go really fancy with a scoop of cream cheese in the center, pour brandy in the bottom. Keep it BBQ with your favorite vinegar sauce in the bottom. Doesn't sound good but it is!

Have you tried the Kentucky Pulled Lamb Shoulder with black BBQ sauce? It's very different and so delicious. I think it is the most under appreciated recipe on the site as it's one of our family's favorites:

Thanks for all the great suggestions. I ended up making bacon jam and putting it on everything even avocado it was amazing. I tried some recipes off the traeger website obviously adding to it. I don't use the traeger spices so I use my own rubs. I think the best was the classic tarte flambee. I did a crostini's with filet cut thin, home made mustard, and horse radish. I need to start adding pictures. Any of you succesful with meat loaf? I can't crack that egg just good ole meat loaf.
