I noticed last year that the bread in our pantry seemed to just not mold and even if I kept milk past its expiration date it was fine. I decided to do a little experiment. In early December last year I put a half gallon of whole milk in the fridge and a hamburger bun in its original bag in the pantry and just left them alone. I threw them away yesterday. The milk was not sour, had no off putting smell and tasted fine. The hamburger bun had dried quite a bit but there was no mold. We buy sourdough bread at a little local bakery it will mold in a week or less. Why does milk and bread from the commercial sources last so long? What’s in it?

Check to see, was that milk irradiated? Irradiated milk can last over 100 days.
As for bread, Martin’s potato rolls last pretty long. Otherwise, I usually buy bakery bread, or organic multi grain. Those max out at about 10 days, or maybe a week after the date on the packaging.

I quit buying white sandwich bread years ago when I left a loaf on top of the fridge for over a month and it didn't mold - kinda scared me plus modern store bought white bread seems to turn into an unappetizing dough ball when chewed. I only buy the HEB store brand of hamburger and hotdog buns due to the texture and "dough ball" problems with other brands.
Milk goes bad for me but I can usually get 2 to 4 weeks past the sell by date.
