As winter gradually gives way to the warmth of spring, a magical transformation begins in the forests of North America – it’s syrup season! One of my favorite times of the year. This time of year marks the start of maple sap collection, to harness the natural sugar produced by the maple tree. As temperatures fluctuate between daytime warmth and nighttime chill, the sap begins to flow, offering a sweet, golden nectar that must be collected and boiled down to transform into our beloved Rutty Buck Maple Syrup. Our families come together to celebrate this age-old tradition, indulging in the delicious flavors and rich history that syrup season brings. From tapping trees to boiling sap and crafting smoked meats, the season is a delightful reminder of nature’s bounty and the ramp up of the sugar harvest!

I hope that this year will be much more consistent than last year. We have warm temperatures and the trees are waking up. Our past two weeks have been way below zero, so it might take some time for the trees to wake up and release their sweet nectar. Sabrina and I tapped about 6 trees at the shop yesterday and then another 15 at a friend's house. This year we are going to running about 40 taps. Stay tuned through out this season for more fun in the sugar bush! We are probably going to be doing our first boil this weekend.
And......Ripley always seems to find the mud during syrup season.
