I just booked a 3 day stay in a vintage camper on the beach in SoCal for next weekend with my lovely bride. They have a stove top, a propane grill, and a campfire grill.
I’m going with the camp fire wood fired grill.
Other than the classic quintessential brats & beans, what are your favorite camp fire meals?

Steak of course on the open fire. Dogs and bratts are always fun. On the LP grill chicken or step it up to fajitas. On a cool evening, probably doesn't apply here, a Goulash hits the spot. Pork chops on the open fire too.
This has been one of my go to ways to cook since my early teens. Back then it was head to the creek with a roll of foil, butter, salt, pepper and a few potatoes. It’s amazing just how many good proteins there are in the wild or that you can bring in an ice chest that work well with salt, pepper, butter, and a foil wrap cooked at the edge of the coal bed of your fire. Almost any good firm fleshed fish, squirrel or quail are outstanding, or just grab some chicken. It’s good and clean up is easy.
I double Oak Smoke suggestions. Scouts taught us how to build a fire. Boil water n wrap veggies and whatnaught in foil then just toss it into the fire. 10-15 min, you have a meal.
I love potato's cooked in the slow coals, not wrapped in foil, just leave the skins on and toss them in.
About 20 mins, scape off the charred outer and smother the smoky fluffy inside with garlic butter, verra narce
If you want to amaze your friends brew your coffee in a paper bag sitting on a rock in your fire. I lost 10 dollars learning that one. The bag will burn down to the water line then it’ll boil water. You can’t pick the bag up, you have to dip the coffee out with your cup. A teaspoon of cold water will make the grounds settle to the bottom of the cup. Cowboy coffee and you don’t have to pack a pot.
We used to make coffee by throwing the grinds into boiling water, let it settle a bit then add some cold water to settle further. Not perfect by any means but fun and good.

Just about everything tastes better around a campfire. Once during a early winter back packing trip on top of Mt. Sterling in the Smoky Mountains we had a no bake cheesecake. It was great. 2 weeks later I had the same thing in our kitchen, it was terrible! Never had it again.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

Anything in a dutch oven, set right by the fire for a slow braising cook. I do it weekly down at our sauna, during the winter season.
Or just meat over the live fire.
My daughter is quite the camp cook. She can cook a really good meal stacking Dutch ovens. I found her a #14 and a #12 three legged lodge on sale the other day on Amazon to give her a broader base to start from. I thought they were a good deal. The #12 was $90 and the #14 was $110.

Man, that is a great set up. I love it when you can stack them like that. If we had bigger groups down at the sauna, I would for sure be doing that. You got some good prices on those as well.
A project I am working on........a coal shovel for the coals. Gonna use the expanded steel as the shovel portion. Just gotta heat it up, bend it and then weld on a handle. Then I can shake out the ash when scooping coals from the fire. Oak Smoke

Large yellow onion, cut in half at the equator, scoop out enough of the center to hold a beef bullion cube and a pat of butter, a few healthy dashes of worcestershire, salt & pepper, wrap in several layers of foil, and throw on hot coals. Cook until onion is steamed.
