Chris Young on cooking from frozen

Interesting video from Chris Young :

I had actually forgotten this until just now, but I used to grill frozen chicken breast fillets all the time 25 or so years ago. Whatever brand they were recommended it, so I didn't even think twice. They always turned out just fine. You're obviously limited in what you can do, as far as marinating or whatever.

I now try to remember to dry brine before freezing.

I used to grill frozen hamburger patties from Sam's Club for big cookouts. Did it for a church social on a big event grill last year in fact! Not my preferred method at home though.

I have a number of times smoked a Boston butt, ribs or a brisket from frozen. If still fully frozen, I just rinse the surface to defrost it enough to take a dry rub and salt, and then throw it on the smoker. I'll wait a few hours to add my meat temp probe. It adds an hour or two to the cook, but the results are usually the same as cooking from thawed, except for not getting to dry brine.

I managed Jack in the Box restaurants in the late '70s. We always cooked from frozen, but the patties were thinner than I think most here would cook.

RonB I worked at a Wendy's in the early 80's, and one of the jobs was to come in early and cram maybe 100 pounds of ground beef through a machine that formed and slapped out those square patties, separated by pieces of wax paper, stack them in bins, cover with Saran Wrap and into the walk-in for the day's burgers. I wonder if they still use fresh ground beef like they did back then... with the quality of today's work force, I kinda doubt it...

When feeding three kids and two working adults, we had many nights with frozen boneless skinless chicken breasts. A bit of butter, some seasoning and/or breading and baked in the oven. Worked like a champ, they were actually pretty good.

I dry brine, rub, vacuum seal and freeze about half the meat I buy. It goes straight from the freezer to the smoker

I have a 3 1/2 year old granddaughter who either asks for Frozen or Cinderella every time I babysit her by myself. Last week she hung out in my home office while her mom took the 1 year old to the doctor, and while the movie let me get a little work done, I think I made her 4 snacks during the 2 hours she was in here...

jfmorris I have a sister 6 years younger than me. My Little Pony and Strawberry Shortcake were on ALL THE TIME. The only break was her addiction to Conan the Barbarian.
