I used to backpack. Cooked everything on a whisperlite one burner stove - so pretty simple one pot meals.

If you're gonna be in one spot, I'd do pulled chuck roasts.
Prep it ahead of time, triple wrap in foil, and freeze.

To cook, dig.a hole, burn down wood to make coals. Put the chuckie on and bury it.
Pull it out of the ground 8 hrs later.

Packing a Dutch oven is for suckers ..... Or teenagers.

Or cook steaks by literally setting them in hot coals. Great sear. Just brush them off before you eat them.

Call the hole method a Cajun Microwave around here.

Thanks! The hole isn't an option, as we won't be in one place. But cooking steaks caveman style would work out very well.

So, weekend is over. It turned out to be simpler than I thought. There was a cement ring with grill grates that could be moved up and down, so no “roughing it” whatsoever. I did stick with my plan though, and it turned out great.

    Sides:
    - 3 tin cans of corn. Toasted with chipotle chili pepper
    - Pickled red onion (done before and brought with me)
    - Grated zucchini
    - Board sauce made with parsley, lemon juice and oil

I rubbed the ribeye with ground coffee and black pepper. I grilled it over direct heat (birch wood) for 1.5 hours, carefully monitoring temp by feeling with my hand (very non-digital), to make sure I developed bark slow enough while
getting it evenly done through and through.

I then rested it in foil (brought it with me folded), and then chopped it up for real beef tacos.

Great flavor, easy to make, and it was devoured by my friends. 6 guys, 3 kilos of meat => 500 grams per person. It all disappeared. I think they liked it 😄

It was great fun just building a fire and monitoring the cook.

Great! You get to cook for the next Meatup! Don't worry - someone will bring a grill of some sort, and you will only have to cook for 15 - 20 people.

I think the tacos is a good idea. When backpacking, I think about possible sides. Maybe some small mushrooms in soy sauce...shouldn't add much weight to what you're carrying. If you can do jerky ahead of time, that's always a hit. Trail chili is also a good choice. Beans, some peppers, some dried spices...it all tastes good over a fire away from home...
