    Cooking the Haul From Park Packing

    This was a very cool place (literally) as it was freezer conditions. The meat was typically unwrapped so you had to put on gloves to pick your meat.

    Now I need to figure out what to do with the rabbit and ox tail (stew was recommended). The beef cheek, I was going to cook like a brisket but last time I bought it, it was already sliced fairly thinly. So I have to work that trimming process out.

    Had to do a double take on the photo of the rabbit. I saw hobbit which is indeed a rare find in most butcher shops.😳

              Nope. Most meat is unlabeled and unwrapped. The steaks I bought were labeled choice and that was all they offered.

              I am pretty sure it’s all choice. I noticed the briskets and some other large cuts on that table had prime stamps.
