    An idea for sliders using Red Lobster Cheddar Bay Biscuits

    If you’ve never had them, they’re pretty damn good. We were in Sam’s Club yesterday, and I picked up a box of the mix, which some folks who have reviewed it say that it is even better than the biscuits in the restaurant? I dunno, I only had them for the first time a couple months ago, and they are pretty good.

    Anyhow, I’m thinking of using the biscuits as slider buns. What could go wrong, right? I see this as an all around win, and something that would open the door for using the biscuits as buns for pulled pork sandwiches, breakfast sandwiches, shredded beef sandwiches… they’re really good.

    We have even found gluten free RL cheddar biscuits! They are outstanding!!! And I’m all for the breakfast sandwich slider! That sounds excellent!

      If you want, I can give you a recipe from scratch, or one using baking mix for them. Pro tip, use aged irish cheddar, and add some fresh green onion to the dough. We have used them as buns with crab cakes remolade sauce, and butter lettuce before. They were pretty dang good.

        Don't forget Old Bay. Fortify it with a bit more salt and garlic for both the mix in, and the butter brush. Or for a twist use some Tonys.

      oooo.....I like the way you think. Have to be careful though, they can be light and crumbly, but oh yes, a mild breakfast sausage in the middle there? Yum!

        I see zero downside, only upside. They are pretty darn good. I am going to have to get some more and some sausage gravy to make them again in the waffle maker.

        While it looks like the restaurant chain is on it's way out, I suspect the biscuit mix will live on. Look forward to your experiment.

          Right after reading your comment, I next saw an article that says they are closing 48 stores, mostly because of the bath they just took on the $20/endless shrimp promotion.

          I guess they didn’t make it up on volume, huh?

          Tom, last week I read a much more thoughtful analysis of their failure causes. The "all you can eat" thing was not helpful, but that's lazy reportage. The more crippling causes were being separated from their original owner group through a couple private equity groups, the first one stripping the owned real estate from under the stores and loading on rental burdens, and the second making a series of bad decisions. Can't find it to give you a link, but it was full of info beyond "all you can..

        We just used the mix the other day at our house. They were good. I didn't stuff myself on them QUITE like I do the infrequent times I go to Red Lobster, but I did eat more than I should have.

        This is a great idea, and while I've seen 'copycat' recipes a few times I've never tried one. texastweeter if you want to share your recipe for these, I'm definitely game!

          I bought a box of that Red Lobster Cheddar Biscuit mix from Sam's Club once. Only once. You have to add your own cheddar cheese. WTHeck? I'd rather make my own biscuits or start with Bisquick made with buttermilk, then.

          Come to think of it, having processed dried cheddar in the mix might have been pretty gross. Even so, I saw it as false advertising.

            Here is the baking mix version. I use pioneer brand but any will do. As far as from scratch, I use Alton Browns baking mix recipe and just sub it in cup for cup.

            Butter Brush
            1/3 C melted butter
            3/4 tsp Old Bay
            1/4 tsp garlic powder
            1/4 tsp parsley flakes

            Biscuits
            2 C baking mix
            3/4 C milk
            1/4 C melted butter
            3oz grated sharp aged Irish Cheddar cheese
            2 green onions finely sliced
            1/4 tsp Old Bay

            Mix all dry biscuit ingredients together in bowl. Add butter and stir to combine. Add milk and stir to combine. Drop by the spoonfuls on parchment lined baking sheet (should make 6-8 biscuits). Bake at 425° 16-18 minutes. While biscuits are baking, stir together the brush. Once biscuits are golden brown and still hot, brush with butter mixture, being sure to stir it as you go.

              I have made them from scratch too. All I did was take my favorite biscuit recipe and and cheese n other stuff after checking a bunch of clone recipes on youtube. I do love the idea of using 'em for breakfast sammies though.

                  Since the meal is mostly just thrown together from the refrigerator, the photos are in “Show Us Your Leftovers”.

                  The biscuits are a little loose; I don’t bake hardly ever, and don’t have much experience with this stuff, I couldn’t eyeball it from looking at the dough. I think they need more cheese and a little less water, and maybe a couple more minutes in the oven. And the garlic butter packet is all salt, I’ll make a nice herbed butter next time. But the idea is sound. The flavor profile doesn’t really match beef, but it would work with chicken, turkey, pork, or any set of breakfast foods, including eggs, sausage, bacon, etc.
