    Funny you say that MB. I was grinding a can up to go a test and was thinking how good it would be as a sandwich spread.

      As if we know what's in the ham salad at the deli. Same for SPAM.

      Or the bologna. I have been known to fry up some bologna for a sammie (mustard and smushed potato chips on white bread) for a trip down memory lane. All by myself. Don't tell my health-conscious husband.

        Chips wake a sandwich UP!!
        When you want to get a little more creative smash them up fine and add them to a scoop of vanilla ice cream and mix them in. Salty-sweet-crunchy!!!

      Was at Costco this weekend and seen it in an 8 pack and reminded me of this but that's way to many cans. So off to Meijer today for a can so let the games continue!

          Oh I don't know ... repurpose what I'm guessing is pretty darn tasty as the protein with some hash browns or in fried rice and I'll bet you've got a success on your hands ... and your plate.

          What a great post, Jon Solberg . It was all looking so good until the very end when that poor Spamloaf looked like it stepped on a land mine. This topic is great entertainment.

            OK. I like SPAM. There I admitted it. Mostly it has been sandwiches but it is great on saltines. I've had it with pineapple, grilled, fried, mixed in scramble eggs, and like it just sliced cold. It is quick to make sandwiches to throw in the cooler and go as I have packing lunches all these years. My favorite is SPAM salad. Make this once and adjust the amounts to your liking and you will never buy those containers in the deli that can be disgusting.

            1 can Spam chilled with the jelly stuff
            1 inch slice cut from the center of a red onion
            2 heaping tablespoons real mayo
            1 1/2 cup bread and butter pickles, get as much liquid off as possible or the final product will be runny

            Run the Spam and onion through the meat grinder with a coarse grind
            Add the mayo
            Chop and cross chop the pickles to your liking, add to mix
            Mix with a spoon and taste

            This has a nice texture to it. Try different breads, too.

            Like so many other things, moderation. Don't eat it every day. Yeah the sodium is higher than a person should eat, so share with a friend. But look at the dry brine we use on shoulders and chucks. Enjoy

              I have pork shoulder to eat all week. Had a 9 pounder on the Weber Sat. I know, no pics of that either. I need more practice with this photo thing.

            Jon Solberg were you taking a shot at Spam Loaf (meat loaf)? If so, like meat loaf a pan helps. My Ya Spama Cakes fell apart, but like your attempt, the taste was there, I will be away from my grill for the next two weeks so my next spam attempts will have to wait.

              Hey I'm not taking this fail lightly. I'm going to get this Spamloaf down before I move on. The goal is to do this without adding addition uncooked pork even if I do feel that would correct most of the issues. What fun would that be? This might even be a good time to play with transglutaminase. Thats going to be a last resort.

              To do list:
              Eliminate moisture
              Increase the binder
              Counteract the salt.

              Watch this space for pan free Spamloaf Part II : )

                Jon some of the sausage recipes call for powdered milk as a binder, not sure if that would help.

              I was all for using Spam in multiple formats until this. I just can't picture this being good. Sushi is a sacred thing to me!

                The best Spam musubi on the island is in the gas station mini marts. Sushi where you gas your car, it doesn't get any better than that!!

                I wonder if adding marmite, anchovy, and soy sauce would enhance the flavor. Readers of "The Food Lab" will know what I'm referring to.

              YEARS ago when I was a young WORM in the oilfield I worked with an old man who had come out of the Blue Ridge Mountains.
              He had no education and could not read or write (not even his own name) seems hard to believe now but it is a fact.
              EVERY day he would bring the same lunch.
              Can of Spam
              1 white onion
              1 tube of saltine crackers
              NOT occasionally--every day.
              I asked him about it once and his reply was that where he was from Spam was considered a luxury. He said he felt like working on an oilfield work over unit was a high station in life for him considering the background he came from and the Spam in a can was his reward for working hard and earning a good living.
              Nice old man and could work a young one into the ground. Not fast but STEADY.
              He'd pop the can of Spam--pull out an old pocket knife with a 6'' blade and make a ritual of Spam and onion on a cracker. He had it down perfect to the last Spam slice/cracker/onion slice. (He was a little spooky the way he handled the knife--kind of like a part of him-hard to explain but he had a rep of trouble before he came West.)
              It strikes me kind of strange the things in life some consider small and insignificant can be considered by others a treat to work for.

              I just recalled--he brought his son down to work oilfield also. His son didn't do the Spam thing but he did do the onion thing. He'd eat a white onion like an apple. Just freaked me out!!

              gcdmd that would have been about 1971--I was working my way through high school then - summers and after school on the work overs. Hard to imagine now but back then tatts were --well they were rarely seen. Some veterans had them but mostly kept them covered up. Tatts back then carried a negative stigma with them for the most part. Back then they were pretty much a real deal sign of remembrance or rebellion--not like now where everyone wants one because they are main stream and kind of expected. As for that old man? NO Way would you have ever seen him or his family with a tattoo. BUT he had a voice that would likely amaze you. Him and his family were some kind of Baptist I believe. They all played and sang.

                Spam n Spinach Frittata

                1 tbsp vegetable oil
                3 oz diced spam
                ¼ small onion, sliced
                2c spinach
                2 whole eggs
                2 egg whites
                2oz cheese of choice
                1/2 teaspoon paprika

                Heat oven to 400°F. In a medium skillet coated with 1 tbsp. oil, cook onion over medium heat, stirring, 5 minutes. Add spinach; stir 5 minutes. Add Spam stir 2 minutes

                Whisk eggs, egg whites, paprika in a bowl.
                Stir in Spam, spinach, onion mixture. Add cheese.

                In a cast-iron skillet coated with oil, cook egg mixture over medium-low heat 1 minute.
                Transfer skillet to oven; bake until eggs are set and center is slightly runny, 6 to 8 minutes.
                Broil until top is golden, 1 minute.












                I added a bit of pepper sauce.
