I saw an ad on Facebook for a company called American Vinegar Works. They claim to age their vinegars in barrels for months producing a better vinegar. It seems pricey. Has anyone used a product like this? Is it actually worth the money?

There have been several reports indicating that a lot of EVOO sold nationally is actually rancid or close to rancid. Costco’s Kirkland brand is actually the best and not rancid. I wouldn’t be surprised if Kirkland vinegar is the same, but I don’t know what makes a high-quality version different from bottom of the barrel. In short, there are probably differences but I suspect you’d be overpaying with this American brand.

This seems premium but not outrageous. I live in a stupid city 🏙️ though. If you like to dip bread in oil and vinegar maybe?? I use fresh citrus for salads mostly. Probably would make a nice gift 🎁 🔥🔥🐿️

You never know. We went on a trip to Italy and they taught us how to taste Olive Oil, 1st press, second press, etc… we knew nothing at the time, but after expert instruction we could easily tell some differences. Not anymore, but the ability lasted for months. Had we practiced when we got home, I’m betting we would still be able to do it.

I am not familiar with American Vinegar Works. Thank you for the link. I subscribe to TJ Robinson's Fresh Pressed Olive Oil Club. Outstanding EVOO's, and vinegars are now available.
My palate was simplistic. Now, not so much. I laid in a supply of small Dixie cups. You won't be forced into a wine tasting here, but look out if I start dragging out olive oils or vinegars! My latest, comparing canola with Chinese roasted rapeseed oil. Same oil, processed differently. You will never go back to canola.
In my case, the oil rabbit hole led to vinegar led to Rancho Gordo beans. I am surprised that AVW apparently does not do balsamic type vinegar. Try very good balsamic on very good vanilla ice cream.
Just received Chinese Baoning Black Vinegar, from The Mala Market. Not opened yet.

yakima I have no idea. I have not gone there to shop, and the bottles I have were a gift someone else chose. I looked at the website to get ideas about how to use some of them. I do not need balsamic so have not looked for that. Their website isn't complicated, and they don't have a vast collection, so should be easy for you to search.

Balsamic vinegar is aged. Is that the subject? We have some as old as 25 years. Absolutely delicious with fresh tomatoes and basil. Salad dressing, braise, marinate. acorgihouse - those flavors look interesting too.

FULL DISCLOSURE: I know the family the owns the company in this post. To respond to the OP's question, I used to think that vinegar fell into two categories, white and cider vinegar and both provided a nice acidic tang when needed. When I met my current girl friend, she introduced me to various infused olive oils and thick, flavored basalmic vinegars. Now I use them fairly often as marinades, dressings or ingredients in my sauces from The Olive Tap here in Pittsburgh. The Dark Chocolate Basalmic Vinegar in particular is the ingredient in my Chocolate Cherry Cordial BBQ sauce that gives it that hint of chocolate that takes it over the top instead of the normal apple cider vinegar. It's not cheap, but it is quality stuff across the board that the family does take very seriously.
