How far past “Best if used by” or “sell by” do you go?
I have some commercial sealed smoked salmon with a “sell by 10/19.
It has been refrigerated below 38° since purchase.

I always have to think these dates are a bit conservative and you can stretch it, but not by much.
Coincidentally, I had two instances of this in the past 24 hours. Last night I reached for a can of beans and noticed it expired in December of 2022. I tossed it. I had other beans that were not expired.
This morning, I really wanted some bacon and needed it fast. I noticed we had a stash of microwave (yeah, I know) bacon in the fridge. It expired on on November 23rd. I opened it. It still looked like bacon. I did four slices and trashed the rest.
Don't eat it I want to go fishing with you this summer. Also didn't you just read the Last Meal thread? Do you want that to be your last meal. Carolyn said ok if you're desperate.
Isn’t smoking fish a way of preserving it? If it passed the smell test I’d give it a try. Now this is coming from someone who has had real food poisoning twice so consider the source.
For me on most things Best by dates are merely a recommendation. Typically what will happen is you will loose flavor over time. However, we are looking at refrigerated fish here which could potentially be different. I would trust my nose on this one.
