    Recipes Wanted

    My friends have a smoker (WSM) and want to do more with it. One of them was bitten by a tic and now is allergic to mammal meat. My friend does a lot on his kettle grill but is looking for items that cannot be done on the grill and need the smoker. I cannot think of anything outside the tough meats of Pork, Beef, etc. He does a lot of chicken, turkey and fish on the grill, but no need to fire up the smoker for those. Any ideas for items is appreciated.

    I know someone affected with the same tick bite ( a mild case) and he smokes quail, dove etc. on his smoker. You can buy game birds from online sources such as Wild Fork, etc. Always check with his doctor first to be sure.

      You can smoke chicken and turkey. You can smoke fish like salmon, along with shrimp, but the smoking times ar 30 minutes to an hour.

      The fowl and fish are great suggestions, but these are easily done on the grill. Fowl and fish would not be better from the WSM, compared to the kettle. I just do not know of anything that would be better on the smoker by using the smoker low and slow. Low and slow softens connective tissue, which is in mammals.

        I use my smoker a lot for non proteins. Smoked Mac and cheese, cheesy potatoes and baked beans are all delicious. Smoked butternut squash is next level and other hard veggies are great with a bit of smoke.

          I also sometimes smoke tomatoes, make a good alternative for dressings and sauces.

          My wife was diagnosed with alpha gal earlier in the year. Thankfully, she just got tested again and her numbers are down more. Once she gets up her nerve, she is going to give beef a go and see what happens. In the mean time, she has not eaten any beef and I have not either. She can eat pork so that has been the blessing because it would hard to do without bacon and sausage.

          I have not eaten beef since she was diagnosed, just did not think it was fair, but I have been cooking like crazy. Honestly have not missed a beat. I do not have a WSM and do most of my smoking on a pellet cooker. I can see your point about not wanting to fire up the WSM for chicken, but that cooker would make some awesome bird. In addition to the chicken, I have prepared a lot of pork and a bunch of other dishes that most would normally prepare inside, I just would rather do my cooking outside. You can also prepare venison or any other wild game. We also raise quail and there are dozens of ways to prepare them. Bottom line, you can be creative with chicken, pork and wild game. You can also think of ways to cook things outside that would normally be prepared inside.

          Just a few thoughts.

            My son was diagnosed with the same disease a few months ago. He has refrained from beef. How often has your wife been tested?

            She was diagnosed in late July. Just got tested again. She was going to try acupuncture but the numbers are at a level worth trying.

            Realizing that this story is anecdotal and involves only one person; I had a friend who had something that sounds similar. He went 15 years without eating pork or beef and he is now finally able to have some pork occasionally. Hopefully folks can recover or overcome.

          A brick of cream cheese, scored then rolled in your fav rub. Smoked, it is a game changer for a condiment or spread.

          Would also consider smoking regular cheese in addition to cream cheese too.

            Chicken, salmon turkey...any poultry, salmon, oysters, shrimp...any seafood, you can bake breads, pasta such as lasagna. Smoked cheeses, nuts, or even trail mix. If you can do it in an oven, you can do it in a smoker/pit.
