    Yo Pit!

    Cooking for a wedding tomorrow, and was curious how long you can leave smoked meats in a Cambro. Can they last in the Cambro 24 hours at room temp, or do they need to go in the fridge over night? What has worked best for you all?

    I would think, cooking for someone else, you would not want your temp to drop below 140*. Unless you are ready to serve.

    Minimum holding temp is 135. You can drop below 135 without harm, you just don't want to hold things below 135 for an extended period of time.

    Stay between 135-140 and you'll be fine.

      You can also wrap and hold in an oven set to its low point. Mine goes down to 170. I’ve held for over 18 hours and never had to worry too much on the holding temperature.

        If I can't maintain 140 in the Cambro overnight, fridge is next choice then? Thanks Alan Brice Jerod Broussard Donw

          If you can’t maintain 140* somehow, then yeah, fridge and reheat or it’s unsafe. I have a toaster oven that will hold 150* perfectly so I use that. My regular oven says its lowest temp is 170* but when I stuck a probe in it, I found that means wildly swinging between 160 and almost 220. So I don’t use that, too hot.

          Plus you run the chance of drying it out if it is not in a foil boat with juices and covered. Do you SousVide?

        I think I've gotten around 6 hours in the faux cambro before it dropped to 150.

          Zip Lock or vac seal. Ice Bath, to stop the cooking process. Refrigerate. Bring back to temp in your sous vide when you are ready. It should be in the same condition as it was when you contained it. Save any extra juice and pour over slices as they are cut.
