Well if all you smart alecs won't help Panhead John launch his new breakfast thread, I'll begin, what the heck. One of my absolute favorite breakfast tacos was created by pitmaster Miguel Vidal at his South Austin bbq joint called Valentina's. He aptly named his breakfast creation the Real Deal Holyfield. It consists of fried egg, diced potatoes, slices of bacon, refried beans and a slice of fully smoked and rendered brisket on a warm flour tortilla.

Ok, it sounds like there’s enough interest to go ahead and do this breakfast deal thingy. If it doesn’t work out, no big deal. Not sure what we’ll call it yet, but I was thinking about…What’s For Breakfast? I talked with Mosca the other day about this and some of the particulars about it. He suggested Show Us Your Breakfast, my first thought too. I guess the title of the post doesn’t matter that much, as long as it tells what we’re trying to do here. Personally, we have so many “Show Us…” posts already, I just wanted it to be a little different, no big deal though. Tom brought up a good point that I hadn’t thought of…..what constitutes breakfast? Everyone’s idea of breakfast might be a little different, so here’s what I’m thinking.
GUIDELINES FOR THE BREAKFAST POST:
I think this should be a place to showcase what most people consider a breakfast cook or meal. That doesn’t mean don’t be creative, far from it, but please, let’s not heat up some leftover pizza, eat it at 9am, call it breakfast and post it. 😂 Anyway, we’re not gonna set a bunch of rules for this, it’s all about having fun and maybe learning some new tricks. I’m sure everyone will do a fantastic job!
Cereal, bacon, sausage, eggs, toast, hash browns, grits, French toast, Blueberry muffins, breakfast tacos, pancakes, waffles, Croissants, raisin bread, steak and eggs, shrimp and grits, huevos rancheros……and much more
DATES AND TIMELINES:
As mentioned earlier, I’m thinking this should start out as a once a month weekend event, something we can look forward to every month….rather than one long continuous post. I thought we could start the post early on a Friday morning and wrap it up Sunday night/Monday morning. Hopefully people will look forward to this and post every month. I’d like to do it on the same weekend each month, makes it easier for people to remember. 1st Friday of the month, 2nd Friday etc. But…..we can announce a reminder to everyone the weekend before the breakfast post, gives everyone a chance to prepare in case they wanna do something special.
Since we’ve never done this before, [that I know of] we can always change things up, down the road if needed. Y’all like this, or have any suggestions? I think this weekend would be a little too soon to start it, maybe any weekend afterwards would work best for most people, give ‘em time to prepare.

I eat an Atkins chocolate chips granola bar Mon-Sat for breakfast. I’ve done this for 5 years or so.
I’ll always cook brunch on Sunday, whether it’s home made French toast, over easy eggs over corned beef hash, egg McMuffins, breakfast burritos, sausage gravy over biscuits, home made cinnamon rolls or waffles from my waffle iron.
This is one of my favorite meals to cook. We also eat breakfast for dinner every three weeks or so.

I have been cooking more b’fast items from scratch since my boys are home this summer. So the weekends consist of me trying to perfect the fluffy buttermilk pancakes. Or maybe butter swim biscuits(jury is still out on this). But will advise, huckleberry jam pairs nicely with any biscuit, so frikkin good.
These fluffy pancakes are made with buttermilk, flour, and eggs, then topped with butter and syrup for a classic breakfast treat.

We have all heard that breakfast is the most important meal of the day, and true or not, it could explain some people who say they don't usually eat it. Ahem. But, breakfast is not the meal most want to or can spend a lot of time on. Still, there are classics that I always like to see what people are doing with. Biscuits and gravy, hash browns, hash, benedicts, etc. When someone opens the door to discussion like this I find out about things like roasted strawberry jam which I would never have ever thought of before. And, I don't limit breakfast dishes to mornings.
