Best is when I nail something at the house (cuz Texas BBQ is wayyy too expensive) and trust me on this, Lone Star beer SUCKS (but itās free while waiting in line at several joints
so I drink it anyway !!!!)

Never had Lone Star beer, but I can appreciate most lawnmower beers for a quick cold chug when flavor isn't the focus. And yes, "best" is when you nail something at home! 100% agree. I shake my head at these 'which is best' or 'Top Ten Best' posts and articles.

I'm from west Texas and I've never seen or had bbq from there that was cooked with that method. I think traditionally it was done with mesquite because that's what's available locally, but over direct fire is not just a west Texas method, that's just old school bbq. Cooking over a pit in the ground has been around for centuries. The XIT Ranch in Dalhart still does it every year, and it's the world's largest free bbq. Go to any of the good bbq joints in west Texas today and you'll find they're cooking on an offset with oak just like most of Texas is these days. Some may use mesquite, but most don't. Honestly, bbq wasn't a big deal in west Texas when I was growing up there in the 70's, 80's, and early 90's, and my dad was a butcher. My biggest concern back then was where I could get the best chicken fried steak.
