Bad Hat BBQ is cooking off 12 slabs of ribs for a fund raising event. Next weekend, OG is smoking 15 racks of ribs and 5 butts, as well as making Hawaiian Mac Salad, BBQ Beans, Coleslaw, chicken breast, cookies, salads, and buying some beach pizza for my daughter's college graduation. Will be using the Shirley and the pellet cooker. Plan to start the butts early on Shirley then after 4 hours switch the the pellet cooker. Once that switch is made in go the ribs.
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I once smoked 84 Costco butts for a high school cheerleading fundraiser (my oldest daughter was a cheerleader). Two rented trailer smokers, plus my offset, to fit them all. I had some cheerleading moms and a dad or two show up to help me apply butt rub and get them on the smokers. I thought they were going to stay, then everyone promptly went home about 9pm or so, leaving me and my Dalmatian to watch these butts all night by myself, feeding oak and charcoal to three smokers, in front of a school. I had to rotate them every hour, mess with the fire every 30 minutes, and it was a lot of work.
About 3am a cop driving by on patrol pulled in to see what the lights and smoke were about, and asked if I had anything he could sample - unfortunately I didn't!
By the time all butts were picked up at noon the next day, and I got the smokers all cleaned up and ready to return, and got my smoker home in the back of the truck, I was tired. My hair was encrusted with grease from the vapor of working with all those butts, and had to be washed several times to get it out. I didn't smoke another butt even for myself for 4-5 years after that experience!
Back then, I knew less about what I was doing, and was using an old dial meat thermometer. I smoked to 150 or so IT, wrapped in foil, and called them done at 195, and put them in coolers with a second wrap of foil at that point.
Old Glory my wife is a cheerleader mom ..... I'm gonna tell her this tonight LOL .... Awesome story. The most i've done at once was 6 butts and that was a lot of work. Can only imagine 84 of them
I cooked 7 butts for a wedding reception that I wasn't going to be attending, and didn't think to also do one for myself while I was at it. I was really sad to see ALL the pulled pork go.
