One of our favorite quick weeknight meals is pork burgers. I get cases of 30 1/3lb frozen patties from the KY Pork Producers Association for $25. Just season with some SPG, grill them and they are great. I don't know if other state associations have this same product, but it would be worth checking into.
Funny I was just going to post something like this - looking for some quicker, lighter week day meals. Can't always be ribeye caps and spare ribs lol.
My go to easy week night grill meals are pork tenderloin and chicken breast on the SNS. Dry brine earlier in the day. Some kind of easy veg/starch on side. Rice cooker is a miracle, bags of Couscous from costco, sweet potatoes in oven (start em early!). Pre mixed salads or some grilled asparagus/zucchini depending on how healthy I wanna be.
I also love fajitas as an easy dinner, inside or out. Throw some chicken thighs in simple marinade, soy, lime, whatever rub I feel like using, sear on grill or cast iron pan until just barely done, remove and chop up while I start the onions and peppers. I love Kosmos Honey Chipotle Killer Bee on this.
Oh another one that's been popular, rice bowls. Jasmine rice in rice cooker. Mandolin some cucumbers (we like the little persian ones) and toss with little soy, sugar and sesame oil. Diced up an avocado and slice up some scallions. My favorite way is to get a big enough piece of wild caught salmon, and pan sear it with a piece of parchment paper for easy clean up. Hardest part is hitting the 5 minute window where an avocado is ripe lol. Top with Bachan sauce.
Sorry if my definition of easy meal is too much lol. I very much look forward to cooking dinners most nights.
My easiest laziest dinner is a bunch of boiled dumplings from asian grocery.
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I'm going to second stir fry. Twice this week I've done a veggie stir fry in my wok on the stove, to have a side to accompany some pork chops I grilled Sunday night. I basically tossed all sorts of raw veggies into the wok after sautéing an onion with some garlic and ginger, then a half cup of water and the lid to let them steam some to cook the harder stuff like carrots and broccoli, then uncover, cook off the liquid as I toss, and then drizzle with random stuff like toasted sesame oil, salt, pepper, rice vinegar and finish with some Kikkoman Teriyaki sauce or Bachan's Japanese BBQ Sauce. Easy and fast way to cook proteins too.
I saw someone recommend a rice cooker. I don't have one of those, but do have an Instant Pot (or knockoff one from Sam's Club), which does great in its rice cooking mode.
