I guess triple the cost of the meat is $600. Alternatively, you can charge for meat cost of $200 and $400 for labor which at $20 a hour is 20 hours. Factoring in charcoal and rub costs of $50, I guess I’d go with $750.
$10 a sandwich for 150 guests is $1500, so you’d be about half price. You could do higher of course.
I smoked pulled pork for my older son’s grad party in 2018. We had about 130 guests throughout the day. 50 pounds of butt was plenty. Granted we had sides and a taco bar. You need to get a better head count than 100-200 people. Even for a friend do not sell yourself short. Cooking that much meat is a lot of work, especially when you consider pulling / shredding the meat. Your time and expertise is valuable.
