I really enjoy his videos. His instructions are always clear and the camerawork and editing makes everything easy to follow. He does all of his dishes in such a way to make them attainable by the home cook.
Perhaps the best thing I admire about him is that he is cognizant of difficult-to-find ingredients and always lets you know if you can leave them out. "Can't find juniper berries? Just leave 'em out. It will still taste amazing, my friends."
