Since it is now my wife and I we don't do a lot of beef. Maybe a Creekstone steak (or tri tip) every two months and about the same for a burger. Our main go to's are chicken and fish. Living in FL I always have fish of some type in the freezer.
We both grew up in MI and anytime you had fish it was always fried and overdone. I thought all fish HAD to be cooked this way. We were moving to SC and spent 4 days in Charleston and I was converted. First had some blackened grouper (and WOW it wasn't overcooked) with crab meat topped with hollandaise which opened up a whole new world to me. Second day had some rare tuna and I was literally "hooked".
Chicken is pretty versatile but we almost never fry it, we like it fried but would rather try something else. We do the ribs, brisket burnt ends and pulled pork but fish is our main dish.
