    Help- Need ideas

    New year Eve and my team is playing The Peach Bowl Semi-Finals. Go DAWGS. Anyway, trying to plan the tailgate. Want to make it a little more special for NYE. Game starts at 8. Will probably be at the lot by 1-2. So 6 hrs. and don't have a pull behind grill or smoker. so.......HELP

    A kettle, vortex, and some wings, that should make a low hassle tailgate. Everyone likes good wings, you could even through some thighs in with them. There are so many good ways to season them you can mix it up a bit. Just my 2 cents worth. Have fun!

      Burnt ends. You can smoke them ahead and either finish then pack them up or warm the onsite. Traditional brisket ends or pork burnt ends or both.

      Cowboy candy (candied jalapeno). Mmm

      Ribs, esp Blasphemy ribs.

        could you time your cooks to be done at home so that you show up with rested meat ready to slice? Then you can enjoy the festivities as well and not worry about tending the grill.

        If that’s an option.

          timing and resting is definitely an option. issue is reheating on something other than a 14in webber.. haha

            No reheat for the meat. Take it off the smoker an hour or two prior to your drive. If you keep it wrapped in foil and a few beach towels inside a cooler, it will be perfect when you serve. Use the Weber to do sides if you need, or just do all cold sides. Even your ribs would be wrapped and held until serving. So, brisket, pork butt, ribs… man that would be a feast for a tail gate! Have fun!

          Honestly, was thinking ribs, wings, maybe some steamed shrimp i can serve cold.

              Lots of good ideas so far, but with the New Year theme, how about a big pot of some Hoppin’ John? It’s supposed to be good luck, after all.

                Or how about Hoppin’ John Jambalaya? At our house for NYD to go with the good luck Jambalaya it is pulled pork and ground beef cabbage casserole for money in the new year. What a combo if you are betting on the game.

                It is the peach bowl, Use Peach wood to smoke with. You could also find/make a peach based BBQ sauce.
