    Smoked salmon query

    I have a buddy who posed a question to me.

    He smoked some salmon at 200 degrees for 4 hours. He left it out to cool from 11:00 pm (honestly he forgot and fell asleep) until 3:00 am then awakened and put it in the fridge.
    I don’t know internal temps because I haven’t been able to get him to get a good thermometer or any food thermometer.

    So the question is do you all think it’s safe to eat?

    4 hours @200 put that fish very well done and if was under smoke the whole time its been pretty well cured. Would I eat it? Probably. Would I feed it to my family? Probably not.

      Rested 4 hrs after being smoked for 4 hrs. Hmmm ... FDA guidelines say no. BUT, I believe if it was refrigerated after the 4 hr rest it should be fairly safe. I'd eat it. I routinely let my cooks sit out a lot longer than 4 hrs with no ill effects. And I have a sensitive constitution. I had a situation with brussel spouts during the Gulf War that turned me inside out for a week. No bueno. I get the rumblly tummy a lot easier now.

          Was it cured well before smoking (lox), or just smoked?

            Smell funky? If not, try a piece and wait 4 hours. If still ok, get er done.

          I’d sample n consume as it goes. Boneless skinless @ Costco is up to $12.99 whew!

            WAY cheaper than catching your own. Boat cost (buy, ins., fees, fuel, maintenance, etc.), motels, fuel for truck, eating out, fishing tackle, yadda, yadda, yadda. 😁

          Trust your nose. Especially with fish. I probably would not take the chance with fish.

          Thanks all! I have passed on to my buddy. My guess is the potentially offending fish will be swimming into the trash for safety’s sake.

            I say regardless of time & temp, what was the temp of the fish when pulled off? And if it had been cooked thoroughly I wouldn't worry about it.
