Finished pulled pork was good. It lacked any good bark bc I wrapped it and it cooked straight through stall and finished way earlier than I wanted. Nobody noticed the difference though
I'd suggest waiting until you work past the stall before wrapping, that is if you want better bark. It's fun experimenting though! Then you learn exactly how you like it- low bark or high bark or in between.

Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

Judging by the size of the serving on the plate, no one was shying away from eating that pork. Even with almost a pound per person I'll bet there wasn't much left over. I'll bet it was in deed a Happy Birthday.
We had tons! Everyone loved it, plus took some pork home. One person told me they had so much fun, and food was so good, they thought it was their birthday SUCCESS
