Pistachio crusted apricots stuffed with St. Andre Triple Cream cheese – Mari Jo

After this pic was taken we realized the Mascarpone was espresso flavored and thought it might not play well with the apricots. We substituted a triple cream cheese instead with excellent results.

Simple to make.

One of the most refreshing appetizers I've ever had.

Bibb lettuce salad with blueberries and bleu cheese – Mari Jo
