    Pistachio crusted apricots stuffed with St. Andre Triple Cream cheese – Mari Jo

    After this pic was taken we realized the Mascarpone was espresso flavored and thought it might not play well with the apricots. We substituted a triple cream cheese instead with excellent results.

    Smoked Cauliflower Steak - Wayne

    Slathered some EVOO on it and then salt for a 6 hour dry brine.

    Slashed then applied the herb rub.

    Onto the pellet smoker at 250F.

    About 1 hour into the smoke.

    At 3 hours, it had reached IT of 145F.

    This turned out spectacularly. It was one of the best lamb racks I've ever eaten. Moist, tender and sweet.

    One of our guests was vegetarian so I accommodated with cauliflower steaks.

    My third attempt at this was my best by far. They were on with the lamb at 250F for about 1 hour 15 minutes.

    Smoked the asparagus before the lamb. 'Smoke' setting, total time 20 mins. Perfect delicate smoke flavor.

    Mari Jo wrapped them in phyllo and tied with a chive leaf.

                        Thanks jfmorris. That's high praise coming from you. I'm so glad you're feeling better and got a cook in, though it scares the hell out of me for the pellet pooper team. That was an awesome display of resolve and pit-masterful-ness. (is that a word?)
