Comfort food for the grand kids. They didn't eat any of the ones with micro greens.
Course Two
Peach and tomato salad with feta – Mari Jo

Very refreshing salad for the dog days of August.
Course Three*
Cheddar Stuffed Bacon Burgers (SVQ gasser) - Wayne
Smoked Mac ‘n Cheese – Wayne

Found this 3 lb package of Wagyu at Costco and thought I'd give it a try.

16 half patties ready to be made into one with some shredded cheddar in the middle.

Finished patties. Sprinkled with Montreal before vac sealing them.

SV burgers at 142F for 45+ mins then seared on the gasser. These were easily the best burgers I have ever made and rival any I've ever eaten.

Roux for cheese sauce.

3 1/3 cups of cheeses added - cheddar, smoked Gouda, Parmesan and Fontina.

Assembled mac n cheese in the skillet and on the smoker. I really like the medium shells since they really hold the cheese sauce. Smoked at 250F for 45 mins for just a kiss of smoke.

After smoking, I put it under a broiler to toast the home made croutons.
