    My Top Ten Dishes - What's Yours?

    I've mentioned in other threads that I am the chief chef and bottle washer at my house. Been cooking for the family for over 30 years. My wife and I set the menu for the week, we shop and I cook. One of the best things, for me, with AR is the different techniques, experience and recipes AR members share.....and I'm looking for new things to cook (and I've cooked quite a few things already that have been posted by members, posted under recipes, etc.).

    So below are my top 10 dishes that my family loves and asks for frequently. If you'd like to see the recipe, PM me. But I'm also looking for your top 10. And I may PM you for your recipe. Like I said, I'm looking for new recipes to cook for the family and no better place to look than AR.

    In no particular order:
    1. Chicken & Dumplings
    2. Gumbo
    3. Harissa Chicken
    4. Chicken Enchiladas
    5. Hobo Joes
    6. Ribs & Sauerkraut (not really a family favorite, but one of mine)
    7. Shrimp Scampi
    8. Fish Tacos
    9. Korean BBQ (Galbi - Short Ribs)
    10. Chicken Florentine (Making it for dinner tonight as a matter of fact)
    Honorable Mention:
    1. Thai BBQ Chicken
    2. Chili
    3. Turkey Noodle Soup
    4. Italian Soup

    sramble eggs n’ hot dogs (cut up of course)
    hot dogs with a g. bean, carrot, corn &’cheese mix.

    pretzals n’ dew
    week old croissant with butter & honey
    Crackers n’ preserves

      Great Thread Idea. We have our weekly standards then specialty dishes and then Holiday Meals.

      Weekly Rotation Dishes:
      1. Grilled Steak/Tri-Tip/Bavette/Steak Tips, etc
      2. Grilled Chicken Thighs
      3. Grilled Pork Chops
      4. Stir Fry Chinese or Thai
      5. Daddy's Famous Pasta
      6. Tacos
      7. Fajitas
      8. Korean Ground Beef Bulgogi
      9. Fried Rice
      10. Chicken Teriyaki

      Most Requested Dishes:
      1. Home Made Chicken Soup
      2. Chili
      3. Pulled Pork
      4. Ribs
      5. Gratin Potatoes Gruyere
      6. Ginger Pork (Shogayaki)
      7. The Best Barbecue Beans - Kenji
      8. Escarole Soup
      9. Garlic-Lime Grilled Pork Tenderloin Steaks

        TripleB Daddy's Famous Pasta is something I made for my kids when they were little and they still ask for it today at 21 YO. It's just sauteed onions, garlic, and hamburger simmered in tomato sauce for an hour or so, served over gemelli pasta. Top with tons of grated cheese.

        Old Glory - Yes, I get that. Hobo Joes (individual casserole dishes with ground beef, potatoes, frozen veggies, seasonings and a slice of American cheese) is a dish that I made for the kids when they were growing up and they still ask for it today. Always puts a smile on my face when they ask for it 🙂

      Green Gazpacho (cucumber, green grapes and a bunch of other stuff)
      Dave's Killer Bread Good Seed thin, toasted with creamy peanut butter and honey on top. And a good cup of strong coffee!

          TripleB Chicken Vesuvio: Is a Classic Italian American Dish invented here in Chicago back in the day. Harry Cary’s Restaurant kind of made it famous in the Italian and Chicago Community. I will PM you my recipe with pics.

        We eat quite simple and low carb Monday - Thursday.

        Our go to meals are:
        Chicken or ground beef tacos
        BLT wraps with Avocado and corn on the cob
        Baked Haddock with riced cauliflower and steamed broccoli
        Giant "Weed" salad with celery, cucumber, tomato, chick peas, sweet red peppers and grilled cold chicken.
        Giant Spinach salad with hard boiled egg, shredded cheese and crunchy bacon.
        Grilled Pork Chops, mashed cauliflower and green beans.
        Pizza rollups (Provolone, mozzarella and pepperoni wrapped up in a low carb wrap then baked until crisp and dipped in pizza sauce) with a side salad.

        We usually get local take out Pizza on Fridays or go out for a fish fry.

        Most Saturdays we go out to dinner

        Sundays are my day to BBQ. Some of our favorites are:
        Cornell Chicken with Syracuse Salt Potatoes and roasted Brussels sprouts.
        Smoked and pulled Chuck Roast Sandwiches with my macaroni salad
        Pulled pork on top of home made mashed potatoes with Cabbage salad with sunflower seeds.
        Reverse seared 2” ribeye with loaded baked potatoes and grilled zucchini. (She has a Filet)
        Brined and seasoned pork tenderloin with garlic herb roasted red potatoes and garlic green beans.

          We eat a lot of the same things, but with a bit more carbs. And I have to say it…… come Sept. 8th - Go Rams!

        2) Porterhouse steak
        3) Antipasto salads
        4) Ribeye steak
        5) Escargot, clams, fish (trout, salmon, bass, tuna, red snapper)...
        6) Coney Island hotdogs
        7) Buffalo steaks (still looking for a supplier)
        8) Pasta
        9) Sausage
        10) New England clam chowder\mac & cheese

        No particular order except lobster and porterhouse.

          Growing up in my house with 3 other brothers, getting a porterhouse steak at our local steak house (Joe Petrelli's) was a rite of passage. Being the youngest by 10 years, it took me a long time to catch up with my siblings.

        The order is as I think of them. Some I don't cook often, but my faves.

        1. Beef plate ribs
        2. Buffalo mac and cheese
        3. Pastitsio
        4. Lasagna
        5. Potato and pickle enchiladas
        6. Tourtiere
        7. Chicago beef sandwiches
        8. Pizza
        9. Beef Stroganoff, or Bourguignon
        10. Carrot cake - hey, is hearty enough for a meal

          Tourtiere is a French Canadian meat pie, Pastitsio is a Greek lasagna type thing.

          Your Tuna Puttanesca graces our table about once a month. And it only cost me about $300 bucks to get all of the pasta attachments to the KA!

        Pizza Napolitano
        Potato Gratins
        Chicken/beef/bean/cheese enchiladas
        Chunky guacamole
        Beef tenderloin filet topped with blue cheese crumbles or truffle butter
        Pulled pork (whole hog or butt) with eastern NC vinegar and red pepper sauce
        Caprese or Burrata salad
        Veggie skewers - onion, tomato, zucchini, yellow squash and sweet peppers

            This is the sort of thing that makes me stay up at night - eliminating possibilities. I'm going to break the rules and list more than 10 so that I don't give myself a hernia. I reserve the right to add more later, to preserve sound mental hygiene 😂

            Raw oysters with fresh horseradish and hot sauce, also with seaweed salad, crema, and a dab of hot sauce on top
            Steamed oysters with lemon garlic butter
            Thai curries, especially red curry with squid and Thai eggplant or green curry with mussels and lots of basil
            Redfish, blackened or Panko-encrusted and fried
            Any taco, don't care what kind, but corn tortillas only for me
            Ramen - any variety, the weirder the better
            Beef Pho with tripe and tendon. Leave out the tripe and tendon and it's not Pho to me.
            Bahn Mi with pate and headcheese
            Dungeness crab sandwiches with fried egg
            Sushi, but cold only, and none of that crunchy, fried bullshit on it. Unami (Sea Urchin) is my fav but very scarce here now.
            Standing rib roast with Yorkshire pudding
            Buttermilk with cornbread in a mug eaten with a spoon
            Black-eyed peas, rice, collards, and cornbread all mixed together.
            Shrimp and Grits
            Fried fish and grits
            Beef short ribs over grits
            Margarita pizza, Neapolitan style
            Peruvian Chicken with green sauce
            Smash burgers
            My grandmother's homemade custard right out of the saucepan with a spoon while it's hot
            Snickerdoodle cookies
            New York Strip, aged and reverse-seared

            Other than the first one, no particular order:

            Mom's chicken fried in bacon grease
            Smoked Brisket/Ribs/Chicken/Pork Butt/Sausage
            Enchiladas in cream or chili con carne sauce
            Fajitas
            Tacos (actually Tex-Mex of any kind)
            Steak
            Pizza of any kind with thick crust (actually any Italian dish will do)
            Mongolian Beef
            Mississippi Roast
            Mincemeat Pie
            German Chocolate sheet cake
            Gumbo
            Pinto Beans w/sweet corn bread
            Tree Beard's Red Beans and Rice w/sausage
            Shrimp of any kind that comes with a sinus clearing eye watering cocktail sauce

            Okay, I think I went over, but there is actually only one meal I actually truly love and that is my mom's fried chicken in bacon grease, mashed potatoes with cream gravy made with bacon grease, risotto Milanese, and fried okra. I know, the fried okra is kinda out place, but mom always said you had to have at least one green vegetable with any meal.. Damn good thing I learned to make those things as a child or I would be SOL today.

            The others I like, but my last meal had better be Mom's. If not, I swear to God I will come back and haunt the shit out of someone.

              Mom's fried chicken in bacon grease.......preach it brother. When (and I still do in my house) I was growing up, mom always had a frying pan with bacon grease on the stove (and extra in the frig). I use 1/2 bacon grease -1/2 vegetable shortening when I fry chicken.

              TripleB Yes, we had the ever present folger's coffee can full of extra in the fridge as well. I only make fried chicken once a year now because I still cook it in 100% bacon grease.
