    Labor Day cooking ideas

    I’m hoping to smoke a few items over the up and coming weekend. Looking for some inspiration from this group of enablers.

    What’s on your list of cooks?

    As noted in another thread, I’m going to try that bacon onion rib thing that Mosca posted. Probably some wings too at some point. Ho hum on that I suppose. Maybe a steak in there somewhere too. 🤷‍♂️

      I’m pretty sure that the in-laws are taking Labor Day. We did Memorial Day and The 4th. If not, then I’ll probably do simple stuff. They like hotdogs, I’ll do some ribs.

        Carne asada likely using a mix of inside and outside skirt steak from Porter Road. Or maybe just one cut and save the rest for next time. We will try making our corn tortillas from scratch using masa. We will also have avocado salsa with cilantro and Mexican crumbly cheese. And let’s add carne asada fries too.

          DogFaced PonySoldier These fries are grocery store French fries with some kosher salt and EVOO. I usually do 400 at about 40 minutes, and ensure they are crispy before I pull them. If not crispy, then an extra 5 to 10 minutes. This is longer than what the bag calls for, which is usually 25-30 minutes.

          The fries do take on a nice smoky flavor, especially if you use those BBQ trays with little holes on the bottom, which allows for liquid to exit and smoke to enter, versus a sheet pan.

          DogFaced PonySoldier I think you could try smoking them first for maybe 20-30 minutes then frying them for crispiness if you were making them from scratch. Or maybe the reverse is best? I haven't tried it.

          These fries are mainly because I will be occupied with the tortilla making and carne asada so they won't require any work.

          No pics or topic handy, because I haven't actually made the carne asada version ever. Our local Mexican place made them for a while, but stopped selling it.

        What other thread? I must have missed it. I seem to recall a group cook was discussed after the last rib cook that was a great success.

        I take it back… it’s the smack down. I remember now.

          Seems like there might be a little throwdown/smackdown next weekend. So, I ain’t telling’ what I’m cooking (but nice try, I’m not sure what log slinger is scared and put you in the middle to try to coerce it out of me)…that’s if I can build up the motivation to pull through with it and get it done. I can say no tofu is currently planed, but I could change my mind .

            Hmmm, I wonder how smoking some tofu on the Yoder for Thai green curry would work. Darn glitchy now you’ve got me planning a little something.

          Yeah, yeah.... I gotta come up with a menu. I dunno.

          The Wife is heading to Miami to hang out with some friends, so I guess I'ma have to wing it solo, but got some friends of my own coming to nosh a bit. So expectations will be high.

            Gosh, I have no idea what I'll cook. I tend to fly by the seat of my pants and leave room for shiny things that catch my eye. Between now and then I'll probably see a post here that inspires me or watch a YouTube video that stirs some unquenchable desire to try something new.

            I’d like to make paella this coming weekend. Not sure that will happen though. Maybe Sunday.

            Or, I’ll break out the 22” and cook some meat and perhaps see if I can get some hard wood to use in the outdoor fireplace and throw a CI skillet in there to cook something??? Have only used the fireplace for fires but nothing for cooking at this point.

            That’s the plan anyway…..I haven’t cooked much of anything this summer.

              Yep, I'll be doing something in the pellet smoker vs offset smackdown next weekend for sure. And now that my SnS kettle has arrived I may have to work in some kind of comparison experiment as part of it... although I likely won't yet feel like I know what I'm doing so soon.

              Might do a rack of beef ribs, I've got a short plate rack and a pair of chuck rib racks... and we just had a mess o'pork yesterday
