Edit: never mind I did what I should have done first and searched. I've found the answer, and the answer is yes, this will work.
I'm cooking some plate ribs today and I want to make sure that they are done far enough advance so that I've got a couple of hours for them to rest prior to serving. These ribs are a set of 3 NAMP 123A ribs cut in half so there is a considerable difference in the amount of meat on the 3 upper and 3 lower ribs. I'm planning on roughly 8 to 9 hours for the 3 uppers and significantly less time for the 3 lowers. I know that I can hold in a cooler for several hours and have done so in the past with no problems. I just recently discovered that I can use the keep warm setting on my oven to get it down to 145*F. In my typical long-winded, roundabout fashion, I guess I'm asking if keep something in the oven at 145*F will work out the same as resting in a cooler.
