On Sunday made Rick Bayless’s pollo al oregano and had some leftover thighs. Today, I sautéed some mushrooms, onions, tomatoes, chopped spinach, and chopped thigh of pollo al oregano. Deglazed pan with homemade salsa, chicken stock, and lime juice. Tossed the chicken/veg in the pan sauce.
I’m on vacation (staycation) and, yes, day drinking had commenced.
We used the pan version of pollo al oregano. Bayless has a grilled version using a spatchcocked chicken and a slightly different marinade.
Nothing fancy or gourmet here. Just a fun indoor lunch.
