Depends on what I'm cooking. And too many variables to give an answer by product, but basically thin things lid up and flip, flip, flip. Thicker stuff is flip until I like the sear and then close the lid with a probe in whatever. And there are exceptions...

Depends what I'm grilling, and by grilling I mean working over direct heat. Usually start with lid up and when flare ups start I close and open as needed. Definitely doing the BBQ tango when grilling managing the flare ups (not all flare ups are bad, if you need to sear) close/open the lid, move food around on the grill, etc. Perfection is never easy is it :-)

I've been waiting for Panhead John to post this, but figured he would be too humble. True un-retouched photo of Panhead John grilling topless, with his lid open.

At our first MeatUp when we grilled steaks in Rockdale, the women wanted us to grill topless. We were all a little inebriated, and decided to comply.

On the gasser, it depends what I'm going for.

If it's just a sear job, it's lid up. Just want that conduction heat to hit the surface, and nothing else. If I want to melt cheese on a burger, it gets domed, or lid down. If I'm cooking something the whole way through, it's lid down, like reverse searing a steak. I haven't done that on the gasser in forever, as I use the Grilla for the cook, and the gas for the sear. So, I guess mostly lid up but when it was my only cooker, lid down, lid up, up and down, whatever.

Only when I'm trying to TRAP the heat to cook the food (top down). Only when I'm trying to sear (quick cook) or get grill marks on my food (top up).

Panhead John I know it will be a blast, and I wish I could commit, but right now all my spare cash is going into finishing this home renovation project. And trying to keep gas in the 34 gallon tank on the truck...

Down, I’m usually trying to smoke things a little and reverse sear. At the moment we have a burn ban so lid is closed as much as possible and sprinklers are running while I cook since cooking with fire is a questionable endeavor right now (like John’s pics).

Down as much as possible, depends on the cook.
