Depends on what I'm cooking. And too many variables to give an answer by product, but basically thin things lid up and flip, flip, flip. Thicker stuff is flip until I like the sear and then close the lid with a probe in whatever. And there are exceptions...

Depends what I'm grilling, and by grilling I mean working over direct heat. Usually start with lid up and when flare ups start I close and open as needed. Definitely doing the BBQ tango when grilling managing the flare ups (not all flare ups are bad, if you need to sear) close/open the lid, move food around on the grill, etc. Perfection is never easy is it :-)

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.

On the gasser, it depends what I'm going for.
If it's just a sear job, it's lid up. Just want that conduction heat to hit the surface, and nothing else. If I want to melt cheese on a burger, it gets domed, or lid down. If I'm cooking something the whole way through, it's lid down, like reverse searing a steak. I haven't done that on the gasser in forever, as I use the Grilla for the cook, and the gas for the sear. So, I guess mostly lid up but when it was my only cooker, lid down, lid up, up and down, whatever.

Down, I’m usually trying to smoke things a little and reverse sear. At the moment we have a burn ban so lid is closed as much as possible and sprinklers are running while I cook since cooking with fire is a questionable endeavor right now (like John’s pics).Last edited by TxF; May 13, 2022, 06:35 PM.
