    Tacos de Barbacoa de Res el estilo de Capitan Miguelito

    A little bit of Troutman, a little bit of Serious Eats, and a little bit of me. They were pretty dang good...

      tbob4 I’m really glad you added the word "dinner" before meat.

      You're right tbob4 that is a winning combo and I employ it often!

      Panhead John - true story - I first wrote it without dinner and thought of your response. I laughed quite a bit and looked to see if I had posted yet for edit. Luckily I hadn’t but you still caught my "almost"

    I think Red Man has the winning answer for what went awry with my cook. The marinade I used called for 1/2 a pineapple pureed PLUS I let it sit overnight. So it likely turned the meat to mush. I'll look for a new recipe minus the pineapple juice and try again.

      I agree. Fresh pineapple contains a proteolytic enzyme, which is why you don't use it in gelatin (a protein) molds. Canning denatures the enzyme, which is also a protein.

      I tried to type slow so you could keep up and Google the words as you went along.

    I had a lot of (stuff) to do all day, and didn’t get time to plan or cook. So I found a bag of chili in the freezer, and made chili tacos.

    They weren’t that good, to be honest. But I gave it a shot. Then Mrs Mosca came home with a box of frozen mini tacos that were okay enough.

      I need to try to cook something this weekend. We have SO much going on though... oh crap, no I just realized, we aren't even going to be home but a few hours during the day the whole weekend. <sigh> So much for that idea. Next weekend looks mostly full, as well.

        Made enchilada casserole and guacamole.

        @Panhead John

        I didn't think it was anything special and didn't pick up on this thread until this morning.

        Here's a shot of what's left of the casserole. The guac is all gone, and you don't want to see what became of it.
