My current cookers include a Shirley Fabrication 24x36 patio model; Weber Performer with the Slow-n-Sear 2.0 & Drip & Griddle; Pit Boss Series 2 propane smoker & SnS Travel Kettle.

I think Red Man has the winning answer for what went awry with my cook. The marinade I used called for 1/2 a pineapple pureed PLUS I let it sit overnight. So it likely turned the meat to mush. I'll look for a new recipe minus the pineapple juice and try again.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
I had a lot of (stuff) to do all day, and didn’t get time to plan or cook. So I found a bag of chili in the freezer, and made chili tacos.
They weren’t that good, to be honest. But I gave it a shot. Then Mrs Mosca came home with a box of frozen mini tacos that were okay enough.Last edited by Mosca; May 6, 2022, 06:29 AM.

Made enchilada casserole and guacamole.

I didn't think it was anything special and didn't pick up on this thread until this morning.
Here's a shot of what's left of the casserole. The guac is all gone, and you don't want to see what became of it.
