    Smoked Hard Boiled Eggs

    I want to give this a try. I have read that you can do it with the shell on or just hard boil and smoke the finished egg. I saw Meat Heads smoked chicken salad method. Just wondering how you do it for a traditional hard boiled egg.

    I have done smoked deviled egg but not just hard cooked.

    I do 225 for about 2 hours, shell on. Smoke does penetrate, though some folks suggest washing the eggs with soap and water to get the chemical protective coating off. I've had success either way.

    Also after an ice bath and peeling you can throw them back on for another 30-60 minutes or so if you have a cold smoking setup

      I have done tea eggs, beet eggs, etc. They were all better than plain boiling, slightly, but I don't think worth the effort for the little extra flavor they give. I rank those things more as a gimmick. Wouldn't do them just for me.

        bbqLuv, I find eggs can be sulfurous smelling, so yes 666! Wow, good catch, wish I had noticed and made a better post!

      I use to tell people the trick to grillin eggs is to get the fire at its hottest, so’s, when ya crack it the eggs solidifies before it hits the grate. It would get em thinkin a bit.

      We used to make a smoked egg vinaigrette in a restaurant I used to work at. We'd boil 7 minute eggs, ice them down and peel them. Then we would 'cold' smoke them with wood chips in a pot in the kitchen. Quick smoke like 10-15 mins since we didn't want to cook the semi-runny yolk as we needed that for the future emulsion.

      I forget the recipe off hand, but it was pretty simple: Smoked eggs, sherry vinegar & grapeseed oil. Same technique as making any other egg based dressing.

      We used the Smoked egg vin as dressing for beef tartare with shallots, capers and fines herbs mixed in

        Skip smoked hard boiled eggs on occasion -- I'm pretty sure he has done it as a cold-smoked and peeled. He can probably give some updates. Once we turned the eggs into these apricot deviled eggs that I think of often: https://iwillmakecrafts.wordpress.co...d-eggs-smoked/

          I'm traveling so don't have my notes in front of me but I smoke boiled and peeled eggs using a smoke tube for I think about 2 hours.

            I think that i will try that method first. It's cold and snowy here so a good time to experiment.
