    No Flipping Needed

    Cook some rockfish on grill grates on Traeger 850 at 400*F, figured about 12-15 minutes, Checked in them at 8 minutes. The fish was done--145*F internal. Fish is my Waterloo. No flipping was needed.
    Removed all bones. Then lightly sprinkled with Lowry's Seasoned salt and black pepper, 50/50 blend.

    This is Plan Your Cook and Cook Your Plan. The plan failed and the cook was good.
    Do you have any stories where it did NOT go as planned but still was a success?

    I was going to cook dino ribs from Porter Road and a flat of pastrami on my pellet cooker when the Fireboard controller malfunctioned. I pulled out my WSM cooked them on there and everything turned out great. Only damage was what little hair I have left turned a shade grayer. Yoder replaced the controller with no charge.

      Woke up bright and early, got Shirley fired up ,,,,,250,,,,,6AM the 15# packer goes on,,,,,
      6 hrs later a very good friend had a family emergency,,,,,Had to go real quick,,,
      wrap the brisket and into the oven @225,,,,,,,
      8:hrs later got home,,,,shut the oven off and gave the packer a quick probe,,,,
      like butter,,,,,let it rest an hr and into the fridge,,,
      not my best but not my worst,,,,,it all got eaten,,,
      15 seconds in the atom blaster and into a sandwich,,,

        My smoker is 5' x 3'diam. rig on a trailer with 4 rotating shelves.
        During an early cook for my nephews frat house one of the shelves dislodged and burned out the motor.
        Chicken and ribs had fallen to the bottom of the barrel, we managed to get the meat out and the shelf back in place.
        With out the motor we had to jam in a piece of hickory to stop the shelves from rotating, got the proteins back in (could only use two shelves) and managed to save the cook!
        Climbing halfway into a hot smoker isn't much fun, but the cold one after sure was good!
