Debra You could go the pork belly route, but I think they would better as a brisket burnt end thing. Definitely recommend super firm tofu if you can get it. Some of the details of the first part of the cook is in post 12 of this thread. I used a Memphis dust style rub with just a little sugar in it. Might be better at half that thickness. That's a lot of blank white tofu in the middle.
