I seek enlightenment. My gut reaction is that nearby bone would result in anomalously cool temps, but for all I know they might be able to warm quicker than the meat... thanks for any info.

T probe too close to bone: read high or low?
Hi all, I have seen the admonition a zillion times, when inserting your T probes, avoid the bones so that you don't compromise the measurement. Not that I have done a comprehensive search, but I have yet to see it written whether the reading will be too high or too low if one is too close to the bone.

Temperature is cooler close to the bone. Remember the old saying "Closer to the bone the juicer the meat"?
