    Beef jerky in dehydrator

    I’m MOSTLY following Meathead’s jerky recipe from the free site (I didn’t have fresh ginger on hand, also added a little bit of meat tenderizer) and I’m going to marinade at least 12 hours (if not 24). I have an electric dehydrator that goes up to 160 degrees - is that enough without cooking first and without having curing salt in the marinade? Thanks!
