    Texas hot guts/links

    I'm interested in this- I'm not from Texas and I doubt I'll ever see any "Texas______" for sale here. So I've been looking around and haven't seen many thoughts on this. What I'm picturing is coarse ground beef, salt, pepper, cayenne or chipotle (or both), maybe with garlic and/onion. I've made a fair amount of sausage and beer and I do believe that simpler recipes turn out better for both. Any thoughts, hopefully from someone familiar with this?
