Smoked linguica, garlic polish, spicy linguica, and Loukaniko (Greek sausage, not smoked). A bit of work, I must say, but the smell of them cooking is borderline etherial. I couldn't find pork shoulders so I used Boston Butts. I smoked the bones for making beans. Recipes upon request.

I just picked up some great spicey locally made sausage.
Be a while before my dad makes it up here to make our deer sausage. He brings cubed up picnic. He has 40 pounds of deboned deer, and I have meat from 2 in the freezer. I think we did 60:40 - deer to pork.
