I use hog rings, but usually just for crimping shut the ends of individual chubs of summer sausage.
There are some pretty good videos on how to twist your sausage so that it doesn't unravel. Here's a pretty good one. The the process starts about 15:40
I have always used hog rings to attach seat covers to the seat frame in automobiles, never saw any use for them otherwise although I did use them to repair the bag on my rear bagging lawnmower and that was probably 15 years ago and it is still holding.

I have used thousands of them for lots of different projects. For sausage, I've only used them for the ends of bigger (2"-4") casings, or tubes of burger meat. For brat size casings they are more trouble than worth. A perfect seal at the end of individual sausages is not all that critical. And don't try to thaw them in the microwave!
