I acquired a 2.75 lb Creminelli Varzi salami and got around to slicing it up yesterday:

Put the slicer at just about the thinnest I could get it, which was a good choice, since this stuff demands a thin slice:

Ate some, vacuumed and froze some, and set some aside for eating this week. This doesn't have fennel seed, which I'm not a huge fan of. It is a mild salami, but very flavorful. If charcuterie is your thing, then this would be great for that.
Good stuff (get it, cause casing is stuffed to make....I'm outta here).
