For some reason I got it in my head to try some sausage with cheese other than asiago or Reggiano. I got some high temp cheddar and made chorizo cheddy brats and cheddy kielbasa. I tried making them in the past with regular cheddar, and it pretty much all leaked out while smoking. The high temp cheese worked great.

Looks good. Do you remember what ratio of cheddar you used? I did 14% high temp cheddar and it was a bit much. I plan to halve that my next sausage go around.
