    First sausage smoke on Lone Star tomorrow

    Over 1.5 yrs since the last smoke. Only 40 pounds to smoke, the rest fresh for gumbo. Should easily go in one load. No raspberry sausage for the Lone Star.

    Since it's been a while the following occured:

    1. I put a latch looking part with all the boiled parts that seems to go to nothing. And it doesn't.

    2. Dad swore the pedal for the stuffer was the same used for the grinder...NOPE. Finally found the correct pedal after 10 minutes of searching.

    3. Buttons on the electric stuffer weren't working. Push the button, don't HOLD the button down Jerod.

    4. Dad said it was the wrong stuffing tube cause it was stainless. Wrong, the plastic tube was for the OTHER stuffer.

    5. Forgot I needed chilled water when weighing out the seasoning the night before.


    We did get the link lengths correct since a tape measure was involved.

                    Lookin' good! HEB has pork butts on sale for $0.97/lb right now - just picked up two. I'm going to make the Pork and Leek bangers again tomorrow with one of them. Such a simple and mild sausage but it has become one of my favorites.

                      Running 175 and then 185 once things got above 145, 12 of the 17 links were 155+. The last 5 are looking at probably 45 minutes more.
